Caramel Apple Pie Magic Bars

These Caramel Apple Pie Magic Bars are the ideal way to eat apple pie! There is A Nilla Wafer Crust topped with Rolos white chocolate, and apples !

I know it's only August, and that it is still 90° out, but I need apple season to be NOW. Fall will come, if I bake it.

Last week, in the middle of building, I learned a valuable lesson I needed to pass on to everybody.

It was day, the builders were working late to finish up a couple of things, Mel was out of town, and I had been making Jordan's dinner at our garage"kitchen" I popped her bagel pizza to the toaster oven to broil and then I began the veggies going in the microwave...and then the power went out.

It turns out that you aren't supposed to use a microwave and a toaster oven on exactly the exact same fuse at precisely the identical time.
(My first thought once the lights went out was, no joke, OMG THE WIFI! #priorities)
Fortunately, the KitchenMart guys were nice enough to take a look at the fuse box for me. (Seriously, could that thing be more confusing? Mel has tried and tried to teach me how it works and I only go into a fugue state and never remember his instructions.) Turns out not only did I blow the fuse it broke. The fantastic part about getting contractors? The next morning, they fixed it.
The moral of this story: do not use both appliances at precisely the exact same time on exactly the same fuse. #YoureWelcome
Talking of stressful situations, I am figuring out that dieting in a remodel isn't going to be easy. I was good all day the day the lights went out...and then I self-medicated with Caramel Apple Pie Magic Bars and wine. I say it was worth every calorie?
It dawned on me a couple of weeks ago I have not made magical bars in a very long time. I decided to remedy that this being one of these, with two variants. (The other will be coming shortly, pinky swear!) This bar version that is magical is among my favorites of all times. It combines my love of caramel condensed milk, and apple pie!

Caramel #ApplePie Magic Bars
  • 60 Nilla Wafers
  • 5 tablespoons unsalted butter melted
  • 1/2 teaspoon salt
  • 1/2 cup sweetened condensed milk
  • 1/2 teaspoon cinnamon
  • 1 large granny smith apple peeled, cored, and diced (a heaping 1 cup)
  • 2 cups white chocolate chips
  • 20 Rolos unwrapped (or other chocolate caramel candy)
  • 1/2 cup pecans chopped
  1. Preheat oven to 350°F. Line a 9x9” square pan with foil and spray with cooking spray.
  2. Process the Nilla Wafers in a food processor until they are a fine crumb. Stir crumbs into melted butter and add salt, stirring with a fork. Press into the bottom of the prepared pan. Bake for 5 minutes.
  3. Stir sweetened condensed milk (SCM) and cinnamon together in a small bowl or measuring cup.
  4. Sprinkle apples, Rolos, pecans, and white chocolate chips over hot crust. Pour SCM over the top evenly. Return to oven and bake another 21-24 minutes until the edges are golden. Cool completely before cutting into bars.
  5. Store in an airtight container for up to 3 days or freeze in a single layer for up to 1 month.
