CHICKEN OLIVIA RECIPE

I have never made a chicken recipe like this before so I was a bit worried about how my husband would respond to it. That disappeared when his dinner plate was put by me in front of him. While he looked at his dinner we held hands to say Grace. He looked at me and said, "My mouth was watering so much looking at my plate I had to swallow before I could say Grace".
Yeah,that pretty much wiped any apprehension I had about dinner off and it just got better after he tasted it. This is a creamy dish with tons of flavor. Perfect served over rice or pasta that was small. This is a fast and really easy dinner to put together with a chicken. Chicken Olivia is like a dream come true. It's really only a matter of pouring or ladling them and mixing of the sauce ingredients and topping the casserole.
The components for Chicken Olivia are extremely common everyday ingredients you might already have. You can bake a couple of chicken breasts and then shred them if you want to make the casserole without using a chicken. Chicken thighs would do the job as well or a blend of dark and white chicken meat. Make sure if you use chicken breasts or thighs of the two you have to make 3 cups total of chicken, or a mixture.

Ingredients
  • 3 cups rotisserie chicken
  • 2 cups sour cream
  • 2 10.05 cans cream of chicken soup
  • 1/2 cup chopped black olives
  • 7 ounce can green chilies
  • 1 1/2 cups grated sharp cheddar cheese
  • salt and pepper to taste
  • Enough cooked rice to serve with the dinner for each person
Instructions
  1. Pick the meat off of the rotisserie chicken (both white and dark meat) and shred it. Place it onto the bottom of a 9x13 baking pan.
  2. In a large bowl mix together both cans of cream of chicken soup, sour cream, black olives, chillies and green onions. Add salt and pepper to taste.
  3. Pour the mixture over the shredded chicken in the pan.  Sprinkle the grated cheese over the top evenly. Cover the pan with foil, bake at 350 degrees for 30 minutes. After 30 minutes remove the foil and put the pan back into the oven until the cheese is melted and bubbly. Serve over rice.
